Baking Challenge: Suet instead of butter?


For the adventurous baker out there, here is something new to try: Suet, a dry, crumbly fat. It has a high melting point which in turn produces a more pliant pastry dough than butter.

The end result is a flaky, savory crust.

If you're interested, Marlow & Daughters, a butcher shop in Williamsburg, Brooklyn will sell you some Suet for $1.50 a pound.
